Ingredients

  • 2 large spinach tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup shredded cheese

Instructions

  1. Heat a skillet over medium heat and add a little butter or olive oil.
  2. Place one spinach tortilla in the skillet and sprinkle half of the feta cheese on one half of the tortilla.
  3. Add chopped spinach and shredded cheese on top of the feta.
  4. Fold the tortilla over to create a half‑moon shape and cook until golden brown, about 3‑4 minutes.
  5. Flip and cook the other side until golden brown and the cheese is melted.
  6. Remove from the skillet and slice into wedges. Serve warm.
