- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup sun-dried tomatoes (packed in oil), drained and chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 4 cups fresh baby spinach
- Salt and black pepper, to taste
- 1/4 cup reserved pasta water (optional, for thinning sauce)
- Fresh basil or parsley, for garnish
Instructions
- Cook spaghetti according to package directions. Reserve 1/4 cup pasta water, then drain.
- Heat olive oil in a pan and sauté garlic and red pepper flakes.
- Add sun-dried tomatoes and sauté briefly.
- Pour in heavy cream, Parmesan cheese, and salt/pepper. Stir until creamy.
- Toss in spinach and cook until wilted.
- Combine cooked spaghetti with the sauce, adding reserved pasta water to adjust the sauce consistency.
- Garnish with fresh basil or parsley, then serve.
Notes
- For extra richness, add more Parmesan cheese to the sauce.
- If you prefer a thicker sauce, reduce the cream or add less pasta water.
- Red pepper flakes are optional but provide a nice kick of spice.
- For a gluten-free option, use gluten-free spaghetti.
