  • 2 cups fresh peaches, sliced
  • 1 cup cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup oats

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine cream cheese, sugar, and vanilla extract. Beat until smooth, then add eggs one at a time, mixing well after each.
  3. In another bowl, mix flour, brown sugar, cinnamon, salt, oats, and melted butter until crumbly.
  4. Spread half of the crumble in the bottom of the dish. Pour cheesecake mixture over it, then layer sliced peaches on top.
  5. Sprinkle remaining crumble over the peaches.
  6. Bake for 35-40 minutes until set and golden brown. Cool before slicing into bars.
