  • 2 cups crushed graham crackers
  • 1/2 cup melted butter
  • 2 cups cream cheese
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups fresh peaches
  • sliced
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Mix crushed graham crackers with melted butter; press into the bottom of the dish to form a crust.
  3. Beat cream cheese and sugar until smooth; add eggs one at a time, then stir in vanilla extract.
  4. Pour cheese mixture over crust and spread evenly.
  5. Combine sliced peaches, brown sugar, cinnamon, and lemon juice; layer on top of cheesecake.
  6. Bake for 40-45 minutes until cheesecake is set and peaches are bubbly.
  7. Cool before slicing into bars.

Notes

  • For a firmer crust
  • refrigerate the pressed graham mixture for 15 minutes before adding the cheesecake layer. Use ripe but firm peaches to prevent excess moisture. Bars can be made a day ahead and stored refrigerated.
