Ingredients
- 2 cups crushed graham crackers
- 1/2 cup melted butter
- 2 cups cream cheese
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 4 cups fresh peaches

- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Mix crushed graham crackers with melted butter; press into the bottom of the dish to form a crust.
- Beat cream cheese and sugar until smooth; add eggs one at a time, then stir in vanilla extract.
- Pour cheese mixture over crust and spread evenly.
- Combine sliced peaches, brown sugar, cinnamon, and lemon juice; layer on top of cheesecake.
- Bake for 40-45 minutes until cheesecake is set and peaches are bubbly.
- Cool before slicing into bars.
Notes
- For a firmer crust
- refrigerate the pressed graham mixture for 15 minutes before adding the cheesecake layer. Use ripe but firm peaches to prevent excess moisture. Bars can be made a day ahead and stored refrigerated.
