- 1 lb boneless, skinless chicken breast, cubed
- 1 tablespoon olive oil
- 1 apple, sliced (preferably Honeycrisp or Gala)
- 1/4 cup pecans, toasted
- 1/4 cup low-sodium chicken broth
- 2 tablespoons pure maple syrup
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper, to taste
Instructions
- Cube the chicken and slice the apple. Toast pecans if needed.
- Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then sear for 2–3 minutes per side until golden brown. Remove from skillet.
- Add sliced apples to the same skillet and sauté for 3–4 minutes until softened.
- Stir in chicken broth, maple syrup, Dijon mustard, and a pinch of salt and pepper. Simmer briefly while scraping the bottom of the pan.
- Return the chicken to the skillet and coat with the glaze. Simmer for 4–5 minutes until thickened.
- Toss in toasted pecans right before serving. Stir or garnish as desired.
