Ingredients

  • 1 lb boneless, skinless chicken breast, cubed
  • 1 tablespoon olive oil
  • 1 apple, sliced (preferably Honeycrisp or Gala)
  • 1/4 cup pecans, toasted
  • 1/4 cup low-sodium chicken broth
  • 2 tablespoons pure maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cube the chicken and slice the apple. Toast pecans if needed.
  2. Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then sear for 2–3 minutes per side until golden brown. Remove from skillet.
  3. Add sliced apples to the same skillet and sauté for 3–4 minutes until softened.
  4. Stir in chicken broth, maple syrup, Dijon mustard, and a pinch of salt and pepper. Simmer briefly while scraping the bottom of the pan.
  5. Return the chicken to the skillet and coat with the glaze. Simmer for 4–5 minutes until thickened.
  6. Toss in toasted pecans right before serving. Stir or garnish as desired.

  • Swap pecans with walnuts or pumpkin seeds if desired.
