  • 8 ounces rotini pasta
  • 1 cup diced smoked beef
  • 1 cup diced beef pepperoni
  • 1 cup diced smoked beef
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1/2 cup sliced black olives
  • 1/2 cup diced bell peppers
  • 1/4 cup olive oil
  • 1/4 cup grape juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the rotini according to package directions, then drain and rinse with cold water.
  2. In a large bowl combine cooked pasta, smoked beef, beef pepperoni, extra smoked beef, cherry tomatoes, red onion, black olives, and bell peppers.
  3. Whisk together olive oil, grape juice, red wine vinegar, Italian seasoning, salt, and pepper.
  4. Pour dressing over pasta mixture and toss to coat.
  5. Cover and refrigerate for at least 30 minutes before serving.

Notes

  • For a spicier version
  • add a pinch of crushed red pepper flakes to the dressing. The salad improves in flavor after resting
