Instructions
- Rinse the quinoa under cold water, then combine it with water or broth in a medium saucepan.
- Bring to a boil, reduce heat to low, cover, and simmer for 12‑15 minutes, or until the liquid is absorbed and the grains are tender.
- Fluff with a fork and set aside to cool slightly.,While the quinoa cooks, place the shrimp in a bowl.
- Add 1 tablespoon olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
