Ingredients

  • 2 pounds frozen hash browns
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar or your choice)
  • 1/2 cup butter, melted
  • 1 can cream of chicken soup
  • 1/2 cup chopped green onions (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl combine frozen hash browns, sour cream, shredded cheese, melted butter, cream of chicken soup, green onions (if using), salt and pepper. Mix until evenly coated.
  3. Grease a 9×13‑inch baking dish and spread the mixture evenly.
  4. Bake for 45 minutes, or until the top is golden brown and the casserole is bubbly.
  5. Allow to cool 5‑10 minutes before serving.

Notes

  • For a spicier version, add a pinch of crushed red pepper flakes. To make ahead, assemble the casserole, cover, and freeze
