- 1½ lbs ground chicken
- ¾ cup seasoned breadcrumbs
- ½ cup grated Parmesan cheese
- 2 large eggs
- 4 cloves garlic, minced
- ½ yellow onion, finely chopped
- ¼ cup milk
- 2 tbsp fresh parsley, chopped
- 1 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup shredded mozzarella cheese (optional, for topping)
- 1 tbsp olive oil (for brushing)
Instructions
- Preheat oven to 375°F (190°C); prepare a baking sheet or loaf pan.
- In a large bowl, mix chicken, breadcrumbs, Parmesan, eggs, garlic, onion, milk, parsley, seasoning, salt, and pepper.
- Shape into a loaf and place on the baking sheet or in the pan.
- Top with mozzarella if desired and brush with olive oil.
- Bake for 45–50 minutes or until internal temp reaches 165°F (74°C).
- Rest for 5–10 minutes before slicing and serving.
Notes
- Do not overmix to avoid a dense meatloaf.
- Fresh garlic offers the best flavor over garlic powder.
- Use a meat thermometer for perfect doneness.
- Add mozzarella topping for extra cheesiness.
