- 2 large eggs
- ¼ cup melted coconut oil or olive oil

- ½ cup unsweetened cocoa powder
- ¾ cup oat flour (or finely blended oats)

- ¼ tsp salt
- ¼ cup dark chocolate chips (sugar-free or 70% cocoa, optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly grease.
- In a large bowl, mash bananas until smooth. Add eggs, melted oil, and vanilla extract. Whisk until combined.
- Sift in cocoa powder, oat flour, baking powder, and salt. Stir until a thick, smooth batter forms.
- Fold in chocolate chips if desired. Pour batter into the prepared pan and spread evenly.
- Bake for 20–25 minutes or until a toothpick inserted in the center comes out slightly moist (for fudgy texture).
- Let cool completely before slicing. Store in the fridge for up to 5 days.
Notes
- You can substitute olive oil for coconut oil if desired.
- Using certified gluten-free oats keeps this recipe gluten-free if needed.
- Chocolate chips are optional and can be omitted for a purely fudgy banana base.
- Chill the brownies for an even fudgier texture when serving.
