  • 2 ¼ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon kosher salt
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • ½ cup butter, softened
  • 1 (15 oz) can pumpkin puree
  • 4 large eggs
  • ¼ cup vegetable oil
  • 1 tablespoon vanilla extract
  • ¼ cup very soft butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • 3 tablespoons milk (plus more as needed)
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch pan.
  2. For the streusel, whisk together the dry ingredients, then stir in melted butter until crumbly. Set aside.
  3. In a large bowl, whisk the dry cake ingredients.
  4. Add softened butter and half the pumpkin puree. Beat until thick and combined.
  5. In another bowl, whisk remaining pumpkin, eggs, oil, and vanilla.
  6. Gradually mix into the batter, beating for about 1 minute until fluffy.
  7. Spread 2 cups of batter in pan. Add 1 cup streusel. Repeat layers twice more, ending with streusel on top.
  8. Bake for 35 minutes. Add reserved streusel and bake an additional 10–15 minutes until set.
  9. Cool for 15–20 minutes.
  10. For the glaze, mix all ingredients until smooth. Drizzle over cooled cake.
