  • 1 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl combine peaches, raspberries, sugar, and lemon juice; let sit 10 minutes.
  2. In another bowl whisk flour, baking powder, and salt. Stir in milk, melted butter, and vanilla until just combined.
  3. Grease a baking dish, pour fruit mixture in, and spoon batter over fruit.
  4. Bake 40–45 minutes until top is golden and a toothpick comes out clean.
  5. Cool slightly before serving; enjoy warm with vanilla ice cream.

Notes

  • For a richer crust
  • brush the top with melted butter during the last five minutes of baking. Let the cobbler rest five minutes after removing from oven to allow the sauce to thicken.
