Ingredients
- 12 Hawaiian rolls
- 6 large eggs
- 1 cup beef chorizo, cooked and crumbled
- 4 slices smoked beef, cooked and chopped
- 1 cup sharp cheddar cheese, shredded
- 2 tablespoons butter, melted (plus extra for brushing)
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Melt butter in a skillet and scramble eggs with salt and pepper.
- Slice rolls and place bottom halves in a baking dish.
- Layer scrambled eggs, beef chorizo, smoked beef, and cheddar on each roll.
- Top with roll tops and brush with melted butter.
- Bake 15–20 minutes until cheese is melted and tops are golden.
- Serve warm.

- add a pinch of cayenne to the eggs. Leftovers reheat well in a 300°F oven for 8–10 minutes.
