Bake until the cheese bubbles and the rolls turn golden for a hearty, satisfying start to the day. Serve them hot with fruit and glass of grape juice for a hearty breakfast


Ingredients

  • 12 Hawaiian rolls
  • 6 large eggs
  • 1 cup beef chorizo, cooked and crumbled
  • 4 slices smoked beef, cooked and chopped
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons butter, melted (plus extra for brushing)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter in a skillet and scramble eggs with salt and pepper.
  3. Slice rolls and place bottom halves in a baking dish.
  4. Layer scrambled eggs, beef chorizo, smoked beef, and cheddar on each roll.
  5. Top with roll tops and brush with melted butter.
  6. Bake 15–20 minutes until cheese is melted and tops are golden.
  7. Serve warm.
