Ingredients

  • 2 cups pasta (your choice)
  • 1 cup black olives, pitted and sliced
  • 1 cup green olives, pitted and sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons grape juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and let cool.
  2. In a large bowl, combine the black olives, green olives, cherry tomatoes, red onion, and parsley.
  3. In a small bowl, whisk together olive oil, grape juice, garlic powder, salt, and pepper.
  4. Add the cooled pasta to the olive mixture and pour the dressing over the top. Toss to combine.
  5. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

  • The salad improves after chilling
  • serve cold or at room temperature. Adjust grape juice for desired acidity.
