- 1½ cups cooked black, brown, or green lentils
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp red pepper flakes, optional
- ½ cup sun-dried tomatoes, chopped
- 1 cup vegetable broth
- ¾ cup heavy cream or coconut cream
- ½ cup grated parmesan cheese
- Salt and black pepper to taste
- Optional: fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and cook until soft and translucent.
- Stir in garlic, oregano, thyme, and red pepper flakes; cook for 30 seconds.
- Add sun-dried tomatoes and lentils, stirring to combine.
- Pour in vegetable broth and simmer for 5 minutes.
- Stir in cream and parmesan cheese until smooth and creamy.
- Simmer gently for 10–15 minutes, stirring occasionally, until thickened.
- Season with salt and black pepper to taste.
- Garnish with fresh basil and serve warm.
Notes
- Gluten-free and vegetarian.
- For a dairy-free version, use coconut cream and omit parmesan or substitute a dairy-free cheese.
- Great served over rice or with crusty gluten-free bread; garnish with fresh basil.
