The Easiest Crockpot White Chicken Chili with Cream Cheese – Cozy, creamy, and comforting, this slow cooker white chili features tender shredded chicken, white beans, corn, diced tomatoes with green chilies, and a rich cream cheese swirl for a kid-friendly fall dinner.

  • 1 1/2 lb boneless skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 can diced tomatoes with green chilies
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 cups chicken broth
  • 8 oz cream cheese, cubed
  • Optional: shredded cheese or chopped cilantro for garnish

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Add beans, corn, diced tomatoes, onion, garlic, cumin, chili powder, paprika, salt, and pepper.
  3. Pour chicken broth over all ingredients.
  4. Cover and cook on low for 6 hours or high for 3-4 hours.
  5. Remove chicken, shred with forks, and return it to the crockpot.
  6. Add cream cheese cubes and stir gently until melted and creamy.
  7. Let cook an additional 10-15 minutes until fully combined.
  8. Taste and adjust seasoning before serving.

Notes

  • For a thicker chili, simmer uncovered for an additional 15-20 minutes after the cream cheese is stirred in.
  • Top with shredded cheese or cilantro for extra flavor.
