- 1 can white beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 can diced tomatoes with green chilies
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 cups chicken broth
- 8 oz cream cheese, cubed
- Optional: shredded cheese or chopped cilantro for garnish
Instructions
- Place chicken breasts in the bottom of the crockpot.
- Add beans, corn, diced tomatoes, onion, garlic, cumin, chili powder, paprika, salt, and pepper.
- Pour chicken broth over all ingredients.
- Cover and cook on low for 6 hours or high for 3-4 hours.
- Remove chicken, shred with forks, and return it to the crockpot.
- Add cream cheese cubes and stir gently until melted and creamy.
- Let cook an additional 10-15 minutes until fully combined.
- Taste and adjust seasoning before serving.
