- 1 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) corn, drained
- 1 can (14 oz) diced tomatoes
- 1 can (10 oz) diced tomatoes with green chilies
- 3 cups beef or chicken broth
- 1 packet taco seasoning (halal)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add halal ground beef and cook until browned, breaking it apart as it cooks.
- Add onion and garlic and cook 2–3 minutes until softened.
- Stir in taco seasoning, chili powder, cumin, salt, and pepper.
- Add black beans, kidney beans, corn, diced tomatoes, and tomatoes with green chilies.
- Pour in broth and bring to a simmer.
- Cook for 15–20 minutes to let flavors meld.
- Serve hot with your favorite taco-inspired toppings.

- You can substitute ground turkey for beef if desired.
