- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup tomato sauce
- ½ cup crushed tomatoes
- 1 tbsp tomato paste
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- ½ cup shredded cheddar cheese
- For the cornbread topping
- 1 cup gluten-free cornmeal
- ½ cup gluten-free all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup milk
- 1 large egg
- 2 tbsp melted butter or oil
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9-inch baking dish or oven-safe skillet.
- In a large skillet over medium heat, cook ground beef and diced onion until browned. Drain excess fat if needed.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in tomato sauce, crushed tomatoes, tomato paste, chili powder, cumin, smoked paprika, salt, and black pepper. Simmer for 5 to 7 minutes.
- Add black beans and corn. Stir well and cook another 2 minutes.
- Pour the beef mixture into the prepared baking dish and sprinkle cheddar cheese evenly on top.
- In a bowl, whisk together cornmeal, gluten-free flour, baking powder, and salt.
- Stir in milk, egg, and melted butter until smooth.
- Pour the cornbread batter evenly over the beef mixture.
- Bake for 20 to 25 minutes until the cornbread is golden and cooked through. Let rest for 5 to 10 minutes before slicing and serving.
Notes
- Gluten-free: uses gluten-free cornmeal and gluten-free all-purpose flour, making this a naturally GF Tex-Mex classic.
- Leftovers refrigerate well; reheat in the microwave or oven.
- To spice it up, add a chopped jalapeño or hot sauce to the beef mixture.
