Description

Texas Tamale Pie recipe: an irresistible, easy Tex-Mex classic featuring seasoned ground beef, beans, corn, and a fluffy gluten-free cornbread topping.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • ½ cup crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • ½ cup shredded cheddar cheese
  • For the cornbread topping
  • 1 cup gluten-free cornmeal
  • ½ cup gluten-free all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter or oil

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9-inch baking dish or oven-safe skillet.
  2. In a large skillet over medium heat, cook ground beef and diced onion until browned. Drain excess fat if needed.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Stir in tomato sauce, crushed tomatoes, tomato paste, chili powder, cumin, smoked paprika, salt, and black pepper. Simmer for 5 to 7 minutes.
  5. Add black beans and corn. Stir well and cook another 2 minutes.
  6. Pour the beef mixture into the prepared baking dish and sprinkle cheddar cheese evenly on top.
  7. In a bowl, whisk together cornmeal, gluten-free flour, baking powder, and salt.
  8. Stir in milk, egg, and melted butter until smooth.
  9. Pour the cornbread batter evenly over the beef mixture.
  10. Bake for 20 to 25 minutes until the cornbread is golden and cooked through. Let rest for 5 to 10 minutes before slicing and serving.

Notes

  • Gluten-free: uses gluten-free cornmeal and gluten-free all-purpose flour, making this a naturally GF Tex-Mex classic.
  • Leftovers refrigerate well; reheat in the microwave or oven.
  • To spice it up, add a chopped jalapeño or hot sauce to the beef mixture.
