Instructions
- Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish.
- Heat olive oil in a skillet over medium heat. Cook ground beef and onion until browned.
- Add garlic, chili powder, cumin, paprika, salt, and pepper. Stir well.
- Mix in black beans and corn, then remove from heat.
- Spread beef mixture evenly into the baking dish and sprinkle with cheese.
- In a bowl, whisk cornmeal, gluten-free flour, baking powder, sugar, and salt.
- Add milk, egg, and melted butter. Stir until smooth.
- Pour cornbread batter evenly over the filling.
- Bake for 35–40 minutes until the topping is golden and set.
- Rest 5–10 minutes before serving with desired toppings.
