Description

Ingredients

  • 1 cup canned black beans, rinsed and drained
  • 1 cup canned corn, drained
  • 1 cup shredded cheddar or Mexican-style cheese

Gluten-free cornbread topping:

  • 1 cup fine yellow cornmeal (gluten-free)
  • ½ cup gluten-free all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • ½ tsp salt
  • 1 cup milk
  • 1 large egg
  • ¼ cup melted butter

Optional for serving:

  • Sour cream
  • Chopped cilantro
  • Sliced jalapeños

Instructions

  1. Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Cook ground beef and onion until browned.
  3. Add garlic, chili powder, cumin, paprika, salt, and pepper. Stir well.
  4. Mix in black beans and corn, then remove from heat.
  5. Spread beef mixture evenly into the baking dish and sprinkle with cheese.
  6. In a bowl, whisk cornmeal, gluten-free flour, baking powder, sugar, and salt.
  7. Add milk, egg, and melted butter. Stir until smooth.
  8. Pour cornbread batter evenly over the filling.
  9. Bake for 35–40 minutes until the topping is golden and set.
  10. Rest 5–10 minutes before serving with desired toppings.
