- 2 lb boneless skinless chicken thighs or breasts
- 1 can pineapple chunks with juice
- ½ cup gluten free soy sauce or coconut aminos
- ¼ cup honey or brown sugar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp rice vinegar
- 1 tbsp cornstarch
- 2 tbsp water
- Optional: sliced green onions or sesame seeds for garnish
Instructions
- Place chicken in the bottom of the slow cooker.
- Add pineapple chunks and juice over the chicken.
- In a bowl, whisk soy sauce, honey, garlic, ginger, and rice vinegar.
- Pour sauce evenly over the chicken.
- Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is tender.
- Remove chicken and shred or slice as desired.
- Mix cornstarch with water and stir into the sauce to thicken.
- Return chicken to the slow cooker and cook for 10–15 minutes until glossy.
- Serve warm over rice and garnish if desired.
Notes
- Gluten-free soy sauce or coconut aminos keep this dish GF-friendly.
- For a thicker sauce, increase the cornstarch slurry to 2 teaspoons.
- Leftovers refrigerate well for up to 3–4 days; reheat gently.
