Description

Tender Pineapple Chicken in a Slow Cooker is a sweet, tangy, and incredibly juicy dish where tender chicken simmers with pineapple and savory seasonings for an easy, family-friendly dinner.


Ingredients

  • 2 lb boneless skinless chicken thighs or breasts
  • 1 can pineapple chunks with juice
  • ½ cup gluten free soy sauce or coconut aminos
  • ¼ cup honey or brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Optional: sliced green onions or sesame seeds for garnish

Instructions

  1. Place chicken in the bottom of the slow cooker.
  2. Add pineapple chunks and juice over the chicken.
  3. In a bowl, whisk soy sauce, honey, garlic, ginger, and rice vinegar.
  4. Pour sauce evenly over the chicken.
  5. Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is tender.
  6. Remove chicken and shred or slice as desired.
  7. Mix cornstarch with water and stir into the sauce to thicken.
  8. Return chicken to the slow cooker and cook for 10–15 minutes until glossy.
  9. Serve warm over rice and garnish if desired.

Notes

  • Gluten-free soy sauce or coconut aminos keep this dish GF-friendly.
  • For a thicker sauce, increase the cornstarch slurry to 2 teaspoons.
