- For the strawberry crunch: 1½ cups crushed golden sandwich cookies
- ½ cup freeze-dried strawberries, crushed
- 2 tbsp melted butter
- For topping: Fresh strawberries, diced (optional)
Instructions
- Preheat oven to 375°F (190°C). Brush tortillas with melted butter and sprinkle with sugar.
- Drape tortillas over the oven rack or taco molds and bake 8–10 minutes until golden and crisp. Cool completely.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- In a separate bowl, whip heavy cream to stiff peaks, then gently fold into the cream cheese mixture.
- Mix crushed cookies, freeze-dried strawberries, and melted butter to make the strawberry crunch.
- Pipe or spoon cheesecake filling into each taco shell.
- Sprinkle generously with strawberry crunch.
- Top with fresh strawberries if desired.
- Chill at least 2 hours before serving for best texture.
