Creamy and spicy buffalo chicken stuffed jumbo pasta shells baked with homemade Alfredo sauce and melted cheese.
Ingredients
20 jumbo pasta shells, 2 cups cooked shredded chicken, 1 cup buffalo sauce, 8 oz cream cheese (softened), 1 cup ricotta cheese, 1½ cups shredded mozzarella cheese (divided), ½ cup shredded parmesan cheese, 2 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, salt & pepper to taste, 1 tbsp chopped parsley (optional); Alfredo sauce: 2 tbsp butter, 3 garlic cloves (minced), 1½ cups heavy cream, 1 cup grated parmesan cheese, ½ tsp black pepper.
Instructions
Cook pasta shells al dente; mix chicken, buffalo sauce, cheeses, and spices. Prepare Alfredo sauce by melting butter, sautéing garlic, adding cream, parmesan, and pepper. Spread half Alfredo in baking dish, stuff shells with filling, arrange shells, cover with remaining sauce and mozzarella. Bake covered 25 mins, uncover 10 mins until bubbly. Garnish with parsley.
Notes
Do not overcook shells; cream cheese must be softened for easy mixing; buffalo sauce level can be adjusted for heat preference; dish can be made ahead and refrigerated or frozen; reheat gently to avoid drying.
