Soft Baked Maple Donut Bars: fluffy, tender, and bakery-style flavor in a portable bar


Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 large eggs
  • 1 cup milk
  • 1/3 cup melted butter or neutral oil
  • 2 tsp vanilla extract
  • 1/3 cup pure maple syrup
  • Maple glaze:
  • 1 cup powdered sugar
  • 2 to 3 tbsp pure maple syrup
  • 1 to 2 tbsp milk
  • Pinch of salt

Instructions

  1. Preheat oven to 350F (175C). Grease an 8×8 inch baking pan or line with parchment.
  2. In a bowl, whisk flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk eggs, milk, melted butter, vanilla, and maple syrup.
  4. Pour the wet ingredients into the dry and mix until just combined; do not overmix.
  5. Spread the batter evenly into the prepared pan.
  6. Bake 22-28 minutes or until a toothpick comes out clean.
  7. Let the bars cool completely.
  8. For the glaze, whisk powdered sugar, maple syrup, milk, and salt until smooth.
  9. Pour or drizzle the glaze over the cooled bars. Let set before slicing.

Notes

  • Store leftovers in an airtight container for up to 3 days at room temperature (or refrigerate for longer).
  • For a dairy-free version, substitute plant-based milk and melted coconut oil or a neutral oil for the butter.
  • To thicken the glaze, add more powdered sugar; to thin it, whisk in more milk a little at a time.
  • Do not overmix the batter to keep bars tender and fluffy.
