Description

Ingredients

  • 2 lbs ground beef
  • 1 cup crushed buttery crackers
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt & pepper to taste
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 45 fresh jalapeños, diced
  • 6 slices turkey bacon, cooked and crumbled
  • 1/2 cup ranch dressing
  • 2 tablespoons sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  • Preheat oven to 375°F.
  • Mix meatloaf ingredients in a large bowl.
  • In a separate bowl, mix jalapeño popper filling ingredients.
  • Flatten half the meat mixture into a loaf shape, add filling, and cover with remaining meat.
  • Bake for 50–60 minutes until cooked through.
  • Whisk ranch drizzle ingredients and pour over meatloaf before serving.

Notes

  • Adjust the number of jalapeños based on your preferred spice level.
  • You can substitute regular bacon for turkey bacon if preferred.
