Ingredients

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 egg
  • ¼ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup BBQ sauce
  • 2 tbsp bourbon
  • 1 tbsp brown sugar
  • 1 tsp Dijon mustard
  • 2 lbs russet potatoes, peeled and chopped
  • 4 tbsp butter
  • ½ cup milk (more as needed)
  • Salt and pepper to taste
  • Optional: chives or parsley for garnish

Instructions

  • Preheat oven to 375°F and grease muffin tin.
  • Mix meatloaf ingredients and divide evenly into muffin cups.
  • Bake for 18–20 minutes.
  • Simmer glaze ingredients; spoon over cupcakes and return to oven for 5 minutes.
  • Boil potatoes, mash with butter and milk.
  • Pipe mashed potatoes on cooled meatloaf cupcakes.
  • Garnish with chives or parsley and serve.

Notes

Use 85/15 ground beef for best texture. Substitute bourbon with apple juice if desired. For best results, let mashed potatoes cool slightly before piping. Perfect make-ahead and freezer-friendly meal for events.
