Small Batch Apple Pumpkin Streusel Muffins are warm, tender muffins made with pumpkin purée and diced apples, crowned with a cinnamon streusel for a cozy fall treat.

- ½ cup pumpkin purée
- 1 egg
- ¼ cup brown sugar
- 2 tbsp vegetable oil
- ½ tsp vanilla extract
- ¾ cup all-purpose flour
- ½ tsp baking soda
- ¼ tsp baking powder
- ½ tsp cinnamon
- ¼ tsp nutmeg
- Pinch of salt
- ½ cup finely chopped apple (peeled and cored)
For the streusel topping:
- 2 tbsp all-purpose flour
- 2 tbsp brown sugar
- ½ tsp cinnamon
- 1 tbsp cold butter, cubed
Instructions
- Preheat oven to 350°F (175°C) and line or grease 6 muffin cups.
- In a bowl, whisk together pumpkin purée, egg, brown sugar, oil, and vanilla.
- In another bowl, mix flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Stir dry ingredients into wet until just combined. Gently fold in chopped apples.
- Divide batter evenly among the 6 muffin cups.
- For the streusel, mix flour, brown sugar, and cinnamon. Cut in butter with a fork until crumbly. Sprinkle evenly on top of muffins.
- Bake for 18–22 minutes, or until a toothpick comes out clean. Let cool slightly before serving.
Notes
- Use pure pumpkin purée rather than pumpkin pie filling for best flavor and texture.
- The streusel topping is optional; you can skip it if you prefer a lighter muffin or sprinkle with a little extra cinnamon sugar.
- Store leftovers in an airtight container for up to 3 days; reheat briefly before serving.
- To make dairy-free, substitute dairy-free butter and a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water) in place of the egg.
