Slow Cooker Lemon Herb Chicken and Rice is a light, fresh, and comforting weeknight dinner with tender chicken, fluffy rice, and bright lemon-herb flavors.

- 1 lb boneless, skinless chicken breasts or thighs
- 1 cup long-grain white rice (uncooked)
- 2 cups low-sodium chicken broth
- 2 tbsp olive oil
- 1 lemon (zest and juice)
- 2 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- ½ tsp paprika
- Salt and pepper to taste
- 1 cup frozen peas or mixed vegetables (optional)
- Fresh parsley and lemon slices, for garnish
Instructions
- Lightly grease the slow cooker with olive oil or nonstick spray.
- Add chicken, rice, chicken broth, lemon zest, lemon juice, garlic, thyme, parsley, paprika, salt, and pepper to the slow cooker. Stir gently to combine.
- Cover and cook on LOW for 5–6 hours or HIGH for 2½–3 hours, until the chicken is tender and the rice is cooked.
- Stir in frozen peas (if using) during the last 20 minutes of cooking.
- Fluff the rice, garnish with fresh parsley and lemon slices, and serve warm.
Notes
- You can substitute chicken thighs for breasts for juicier results.
- To keep this gluten-free, use a gluten-free chicken broth and verify any add-ins are GF.
- For a brighter flavor, add extra lemon zest at the end and a squeeze of fresh lemon juice to taste.
