Description

Slow Cooker Lemon Herb Chicken and Rice is a light, fresh, and comforting weeknight dinner with tender chicken, fluffy rice, and bright lemon-herb flavors.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 cup long-grain white rice (uncooked)
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 lemon (zest and juice)
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • ½ tsp paprika
  • Salt and pepper to taste
  • 1 cup frozen peas or mixed vegetables (optional)
  • Fresh parsley and lemon slices, for garnish

Instructions

  1. Lightly grease the slow cooker with olive oil or nonstick spray.
  2. Add chicken, rice, chicken broth, lemon zest, lemon juice, garlic, thyme, parsley, paprika, salt, and pepper to the slow cooker. Stir gently to combine.
  3. Cover and cook on LOW for 5–6 hours or HIGH for 2½–3 hours, until the chicken is tender and the rice is cooked.
  4. Stir in frozen peas (if using) during the last 20 minutes of cooking.
  5. Fluff the rice, garnish with fresh parsley and lemon slices, and serve warm.

Notes

  • You can substitute chicken thighs for breasts for juicier results.
  • To keep this gluten-free, use a gluten-free chicken broth and verify any add-ins are GF.
  • For a brighter flavor, add extra lemon zest at the end and a squeeze of fresh lemon juice to taste.
