- 2 lb beef chuck or stew beef, sliced into chunks
- 1/2 cup low-sodium soy sauce or tamari
- 1/4 cup brown sugar
- 2 tbsp sesame oil
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp rice vinegar
- 1 tbsp halal-friendly gochujang or chili paste
- 1/2 tsp black pepper
- 1 cup beef broth
- 12 oz udon noodles
- 2 green onions, sliced
- Optional garnish: sesame seeds
Instructions
- Place beef evenly in the slow cooker.
- In a bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, rice vinegar, gochujang, black pepper, and beef broth.
- Pour the sauce over the beef and stir gently to coat.
- Cover and cook on low for 8 hours or until the beef is very tender.
- Cook udon noodles according to package instructions and drain.
- Shred or break apart the beef slightly, then stir in the cooked noodles until well coated with sauce.
- Garnish with green onions and sesame seeds before serving.
Notes
- Make ahead: refrigerate the sauce and beef; reheat before serving for a faster dinner.
- Gluten note: use gluten-free tamari to make it gluten-free; check that gochujang is gluten-free if needed.
- Leftovers can be stored in the fridge for up to 3 days. Reheat gently.
- To lighten the dish, reduce sugar to 2–3 tablespoons or use a sugar substitute.
