Slow Cooker Garlic Butter Chicken and Veggies – Tender, juicy chicken and colorful vegetables come together in a rich garlic butter sauce for a comforting weeknight dinner.

- 1½ lb boneless skinless chicken breasts or thighs
- 2 cups baby potatoes, halved
- 1 cup carrots, sliced
- 1 cup green beans, trimmed
- 3 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1 tsp dried Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ cup chicken broth
- Optional: fresh parsley for garnish
Instructions
- Lightly grease the slow cooker and place chicken in the bottom.
- Add potatoes, carrots, and green beans over the chicken.
- In a small bowl, mix melted butter, garlic, Italian seasoning, paprika, salt, and pepper.
- Pour garlic butter mixture evenly over chicken and vegetables.
- Add chicken broth around the sides.
- Cover and cook on low for 5–6 hours or high for 3–4 hours, until chicken is tender and cooked through.
- Spoon sauce over the chicken and veggies before serving.
- Garnish with fresh parsley if desired.
Notes
- Can use chicken breasts or thighs interchangeably.
- For a thicker sauce, remove the lid during the last 30 minutes of cooking to reduce slightly, or thicken with a slurry of cornstarch and water.
- Serve with a side of crusty bread or a simple green salad for a complete meal.
