- 1 lb ground beef
- 1 medium onion, diced
- 3 cups frozen diced potatoes (or peeled and diced potatoes)
- 1 can corn, drained
- 1 can kidney beans or pinto beans, drained and rinsed
- 1 can cream of mushroom soup
- ½ cup beef broth
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp salt
- 1½ cups shredded cheddar cheese
- Optional: chopped green onions or parsley for garnish
Instructions
- In a skillet over medium heat, cook ground beef and diced onion until beef is browned. Drain excess fat.
- Add cooked beef to the slow cooker along with potatoes, corn, and beans.
- In a bowl, whisk together cream of mushroom soup, beef broth, garlic powder, paprika, salt, and pepper.
- Pour mixture over ingredients in the slow cooker and stir gently to combine.
- Cover and cook on low for 7 hours or until potatoes are tender.
- Sprinkle shredded cheese over the top, cover, and cook for an additional 15 minutes until melted.
- Garnish if desired and serve warm.
Notes
- Can substitute kidney beans or pinto beans based on preference.
- For a lighter version, use less cheese or a reduced-fat cheese.
