- 3 cups potatoes, peeled and diced
- 2 carrots, sliced
- 2 celery stalks, chopped

- 1 cup frozen peas
- 2 tbsp olive oil
- 2 tbsp all-purpose flour
- 1 tsp salt

- 1 tsp dried thyme
- ½ tsp dried rosemary
- Optional: chopped parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat and lightly brown the chicken pieces.
- Transfer chicken to the slow cooker and add potatoes, carrots, celery, onion, and garlic.
- Sprinkle flour, salt, pepper, thyme, and rosemary over the ingredients and stir gently.
- Pour in chicken broth and mix until everything is well combined.
- Cover and cook on low for 7 hours until chicken is tender and vegetables are soft.
- Stir in frozen peas during the last 15 minutes of cooking.
- Taste, adjust seasoning if needed, garnish, and serve hot.

- For a thicker broth, whisk the flour with a little broth before adding to the slow cooker to avoid lumps.
- To keep this gluten-friendly, use a gluten-free all-purpose flour or cornstarch in place of regular flour.
