These golden, cheesy zucchini cottage cheese fritters are crispy on the outside, tender on the inside, and packed with protein. Perfect for meal prep, brunch, or a light dinner.

- 2 cups grated zucchini, squeezed dry
- ½ cup cottage cheese
- 1 egg
- ¼ cup flour
- 1 tsp garlic powder
- Salt & pepper, to taste
- Oil for frying
Instructions
- 1. Grate zucchini and squeeze dry using a clean towel.
- 2. In a bowl, mix zucchini, cottage cheese, egg, flour, garlic powder, salt, and pepper.
- 3. Heat 1 tablespoon oil in a skillet over medium heat.
- 4. Scoop ¼-cup portions of batter, flatten slightly, and place in skillet.
- 5. Fry 3–4 minutes per side until golden and crispy.
- 6. Drain on paper towels and repeat with remaining batter.
- 7. Serve warm with sour cream, yogurt, or your favorite dip.
Notes
- Optional additions include chives, Parmesan, red pepper flakes, or fresh herbs.
- Reheat in a toaster oven for best crispiness.
- Can be frozen for up to 2 months and reheated in a skillet or oven.
