Description

These golden, cheesy zucchini cottage cheese fritters are crispy on the outside, tender on the inside, and packed with protein. Perfect for meal prep, brunch, or a light dinner.


Ingredients

Scale
  • 2 cups grated zucchini, squeezed dry
  • ½ cup cottage cheese
  • 1 egg
  • ¼ cup flour
  • 1 tsp garlic powder
  • Salt & pepper, to taste
  • Oil for frying

Instructions

  • 1. Grate zucchini and squeeze dry using a clean towel.
  • 2. In a bowl, mix zucchini, cottage cheese, egg, flour, garlic powder, salt, and pepper.
  • 3. Heat 1 tablespoon oil in a skillet over medium heat.
  • 4. Scoop ¼-cup portions of batter, flatten slightly, and place in skillet.
  • 5. Fry 3–4 minutes per side until golden and crispy.
  • 6. Drain on paper towels and repeat with remaining batter.
  • 7. Serve warm with sour cream, yogurt, or your favorite dip.

Notes

  • Optional additions include chives, Parmesan, red pepper flakes, or fresh herbs.
  • Reheat in a toaster oven for best crispiness.
  • Can be frozen for up to 2 months and reheated in a skillet or oven.
