- 1 lb halal Italian-style beef or turkey sausage, casings removed
- 1 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups diced potatoes
- 6 cups chicken or vegetable broth
- 1 cup heavy cream
- ½ cup milk
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and pepper to taste
- 2 cups baby spinach or kale
- ¼ cup grated Parmesan (halal-certified)
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook, breaking it up, until browned.
- Add onion and garlic and cook 2–3 minutes until fragrant.
- Stir in carrots, celery, potatoes, Italian seasoning, paprika, salt, and pepper.
- Pour in broth and bring to a simmer.
- Cook 15–18 minutes until potatoes are fork-tender.
- Reduce heat and stir in heavy cream, milk, and Parmesan until creamy.
- Add spinach and cook 1–2 minutes until wilted.
- Taste and adjust seasoning before serving.
Notes
- For a lighter version, substitute light cream or half-and-half and skim milk.
- Use halal-certified sausage to keep this dish halal.
- Stir in 2 cups of baby spinach or kale at the end for extra greens.
- Adjust salt depending on the saltiness of your broth and sausage.
