- 1 lb beef or chicken sausage, sliced
- 4 slices turkey bacon, chopped
- 1 cup dried lentils, rinsed
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 6 cups chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp paprika
- Salt and black pepper to taste
- Optional: fresh parsley for garnish
Instructions
- In a skillet, cook turkey bacon until lightly crisp; set aside.
- In the same skillet, brown sausage slices until lightly golden.
- Add lentils, onion, carrots, celery, and garlic to the crockpot.
- Top with cooked sausage and turkey bacon.
- Pour in diced tomatoes and chicken broth.
- Stir in oregano, basil, paprika, salt, and pepper.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until lentils are tender.
- Taste and adjust seasoning before serving.
- Garnish with fresh parsley if desired.
Notes
- Can be made entirely in a slow cooker; sear meats first for extra flavor.
- Substitute pork sausage with turkey or chicken sausage for a lighter option.
- Leftovers keep for 4–5 days in the fridge and can be frozen for up to 3 months.
