Description

Sausage and Lentil Soup is a cozy, hearty, and flavorful bowl perfect for comforting meals.


Ingredients

  • 1 lb beef or chicken sausage, sliced
  • 4 slices turkey bacon, chopped
  • 1 cup dried lentils, rinsed
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 6 cups chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. In a skillet, cook turkey bacon until lightly crisp; set aside.
  2. In the same skillet, brown sausage slices until lightly golden.
  3. Add lentils, onion, carrots, celery, and garlic to the crockpot.
  4. Top with cooked sausage and turkey bacon.
  5. Pour in diced tomatoes and chicken broth.
  6. Stir in oregano, basil, paprika, salt, and pepper.
  7. Cover and cook on low for 6–7 hours or high for 3–4 hours, until lentils are tender.
  8. Taste and adjust seasoning before serving.
  9. Garnish with fresh parsley if desired.

Notes

  • Can be made entirely in a slow cooker; sear meats first for extra flavor.
  • Substitute pork sausage with turkey or chicken sausage for a lighter option.
  • Leftovers keep for 4–5 days in the fridge and can be frozen for up to 3 months.
