- 1 lb halal beef or chicken breakfast sausage, cooked and crumbled
- 1 cup shredded sharp cheddar cheese
- 4 large eggs
- ¼ cup milk
- ¾ cup all-purpose flour
- 1 tsp baking powder
- ½ tsp garlic powder
- ½ tsp black pepper
- Salt to taste
- Optional add-ins: chopped green onions or diced bell peppers
Instructions
- Preheat oven to 375°F (190°C) and grease a mini muffin tin.
- In a bowl, whisk eggs and milk until smooth.
- Stir in flour, baking powder, garlic powder, salt, and pepper.
- Fold in cooked sausage, cheddar cheese, and optional add-ins.
- Spoon mixture evenly into muffin cups.
- Bake for 18–22 minutes until golden and set in the center.
- Let cool slightly before removing from the pan.

- Can be prepared ahead and reheated for quick breakfasts.
- Substitute hot or mild halal sausage to taste.
- Use low-fat cheddar for a lighter version.
