Description

Salmon Bites Bowls: a 3-step explosive creamy savory bowl featuring crispy salmon bites tossed in bang bang sauce over rice with fresh veggies.


Ingredients

  • 1 lb salmon fillets, skin removed and cut into 1-inch cubes
  • 2 tbsp cornstarch
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey or maple syrup
  • 1 tsp lime juice
  • 2 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cucumber, sliced or diced
  • 1 avocado, sliced
  • 2 green onions, chopped
  • Sesame seeds, for garnish

Instructions

  1. Pat salmon pieces dry and season with salt and pepper. Toss with cornstarch until evenly coated.
  2. Heat olive oil in a skillet or air fryer at 400°F (200°C). Cook salmon for 6–8 minutes, turning occasionally until crispy and golden on all sides.
  3. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  4. Toss the cooked salmon bites in the bang bang sauce until well coated.
  5. To assemble the bowls, layer rice at the bottom, top with sauced salmon bites, shredded carrots, cucumber, and avocado slices.
  6. Garnish with sesame seeds and green onions before serving.

Notes

  • For a lighter version, use light mayonnaise or a Greek yogurt–mayo mix.
  • Air fryer method: 400°F (200°C) for 6–8 minutes until crispy.
  • Rice can be substituted with quinoa or cauliflower rice for a lower-carb option.
  • Meal-prep tip: store sauce separately and drizzle just before serving.
