- 1 lb salmon fillets, skin removed and cut into 1-inch cubes
- 2 tbsp cornstarch
- 1 tbsp olive oil
- Salt and pepper to taste
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1 tbsp sriracha (adjust to spice level)
- 1 tsp honey or maple syrup
- 1 tsp lime juice
- 2 cups cooked white or brown rice
- 1 cup shredded carrots
- 1 cucumber, sliced or diced
- 1 avocado, sliced
- 2 green onions, chopped
- Sesame seeds, for garnish
Instructions
- Pat salmon pieces dry and season with salt and pepper. Toss with cornstarch until evenly coated.
- Heat olive oil in a skillet or air fryer at 400°F (200°C). Cook salmon for 6–8 minutes, turning occasionally until crispy and golden on all sides.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
- Toss the cooked salmon bites in the bang bang sauce until well coated.
- To assemble the bowls, layer rice at the bottom, top with sauced salmon bites, shredded carrots, cucumber, and avocado slices.
- Garnish with sesame seeds and green onions before serving.
Notes
- For a lighter version, use light mayonnaise or a Greek yogurt–mayo mix.
- Air fryer method: 400°F (200°C) for 6–8 minutes until crispy.
- Rice can be substituted with quinoa or cauliflower rice for a lower-carb option.
