Roasted Butternut Squash With Ground Turkey: A cozy, nourishing main dish that pairs sweet roasted squash with savory ground turkey for a satisfying weeknight dinner.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp chili powder
  • ½ cup shredded mozzarella or cheddar cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss cubed butternut squash with olive oil, salt, black pepper, paprika, and thyme. Spread evenly on the baking sheet.
  3. Roast for 25 to 30 minutes until tender and lightly caramelized, stirring halfway through.
  4. While squash roasts, heat a skillet over medium heat. Add diced onion and cook for 2 to 3 minutes until softened.
  5. Add ground turkey and cook until browned, breaking it apart as it cooks.
  6. Stir in garlic, oregano, chili powder, salt, and pepper. Cook for another 1 to 2 minutes.
  7. Remove squash from oven and transfer to a baking dish. Top with cooked turkey mixture and gently combine.
  8. Sprinkle cheese evenly over the top and return to the oven for 8 to 10 minutes until melted and bubbly.
  9. Garnish with fresh parsley and serve warm.

Notes

  • For a lighter version, use lean ground turkey and reduced-fat cheese.
  • Leftovers store well in the refrigerator and reheat nicely in the microwave or oven.
  • You can optionally turn this into a one-pan dish by mixing the turkey directly with the roasted squash on the sheet before adding cheese.
