Instructions

  1. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
  2. Add pumpkin puree, egg yolk, and vanilla; mix until well combined.
  3. In a separate bowl, whisk flour, baking soda, cream of tartar, cinnamon, pumpkin pie spice, and salt.
  4. Add the dry ingredients to the wet mixture and stir until just combined. Do not overmix.
  5. Cover the dough and chill for at least 30 minutes (1 hour for best results).
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. In a small bowl, mix 3 tablespoons sugar and 1 teaspoon cinnamon for rolling.
  8. Scoop about 1 tablespoon of dough, roll into a ball, and coat in cinnamon sugar.
  9. Place on baking sheet, spacing 2 inches apart. Gently flatten each ball slightly.
  10. Bake for 9–11 minutes, until edges are set and centers look slightly underdone.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
