Description
Pumpkin French Toast Breakfast Recipe – A cozy fall-inspired breakfast featuring pumpkin-spiced French toast that’s soft, golden, and perfect for a comforting autumn morning.
Ingredients
Scale
- 4 slices thick bread (brioche or challah works great)
- 2 large eggs
- ½ cup milk or half-and-half
- ¼ cup pumpkin puree
- 1 tbsp brown sugar
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp vanilla extract
- Pinch of salt
- Butter or oil for cooking
- Optional toppings: maple syrup, whipped cream, chopped pecans, powdered sugar, or extra cinnamon
Instructions
- In a mixing bowl, whisk together eggs, milk, pumpkin puree, brown sugar, cinnamon, nutmeg, vanilla, and salt until smooth.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Dip each bread slice into the pumpkin mixture, coating both sides well but not soaking through.
- Cook each slice for 2–3 minutes per side until golden brown and crisp.
- Serve warm with your favorite toppings—maple syrup, whipped cream, or a sprinkle of cinnamon sugar.
Notes
- Best served immediately for a soft, warm texture.
- If bread is very fresh, soak time can be reduced to prevent sogginess.
- For dairy-free, use almond milk and dairy-free butter or oil.
- To make ahead, store pumpkin mixture in the fridge for up to 2 days and dip bread just before cooking.
- Leftovers can be stored in the refrigerator for up to 1 day and reheated gently.
