Instructions
- Line a 9×13 inch baking pan with parchment, leaving overhang on two sides for easy lifting. Preheat oven to 350 °F (175 °C).
- In a medium pot over low heat, melt the butter. Once melted, remove from heat and stir in brown sugar and granulated sugar until smooth.
- Stir in vanilla, then whisk in eggs one at a time until fully incorporated.
- Stir in pumpkin puree until mixture is smooth and even.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
- Add the dry ingredients to the wet mixture and stir just until blended. Avoid overmixing.
- Fold in dark chocolate chips (reserving a few to sprinkle on top if desired).
- Pour batter into the prepared pan and spread evenly. Sprinkle the reserved chocolate chips over the top if using.
- Bake for 25–30 minutes, or until the edges are set and a toothpick in the center comes out with a few moist crumbs (you don’t want fully clean — you want fudgy!).
- Let the bars cool completely in pan on a wire rack (this helps them set). Use the parchment overhang to lift them out.
- Cut into squares or bars and serve.
