Description

Pizza Cottage Cheese Bake: a protein-packed, gluten-free vegetarian dinner that captures all the cozy pizza flavors in a lighter cottage cheese bake.


Ingredients

  • 3 cups cottage cheese
  • 2 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 cup sliced mushrooms
  • 1 cup diced bell peppers
  • 0.5 cup sliced black olives
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • Salt and black pepper, to taste
  • Olive oil spray or light coating for baking dish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Spread half of the cottage cheese evenly across the bottom of the dish.
  3. Layer with half of the marinara sauce, followed by half of the vegetables and mozzarella cheese.
  4. Repeat layers with remaining cottage cheese, marinara, vegetables, and cheese.
  5. Sprinkle Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper over the top.
  6. Bake uncovered for 30–35 minutes until bubbly and lightly golden on top.
  7. Let rest for 5 minutes before serving.
