- 3 cups cottage cheese
- 2 cups marinara sauce
- 1.5 cups shredded mozzarella cheese
- 0.5 cup grated Parmesan cheese
- 1 cup sliced mushrooms
- 1 cup diced bell peppers
- 0.5 cup sliced black olives
- 1 tsp Italian seasoning
- 0.5 tsp garlic powder
- Salt and black pepper, to taste
- Olive oil spray or light coating for baking dish
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Spread half of the cottage cheese evenly across the bottom of the dish.
- Layer with half of the marinara sauce, followed by half of the vegetables and mozzarella cheese.
- Repeat layers with remaining cottage cheese, marinara, vegetables, and cheese.
- Sprinkle Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper over the top.
- Bake uncovered for 30–35 minutes until bubbly and lightly golden on top.
- Let rest for 5 minutes before serving.

- Gluten-free and vegetarian-friendly.
- Can be assembled ahead and refrigerated for up to 24 hours before baking.
