Peppermint Meltaways are soft, delicate cookies bursting with cool peppermint sweetness, topped with a peppermint-kissed frosting and festive crushed candy canes.

- 1 cup unsalted butter, softened
- ½ cup powdered sugar
- 1 tsp peppermint extract
- 1¼ cups all-purpose flour
- ½ cup cornstarch
- ¼ tsp salt
- For peppermint frosting:
- 2 tbsp unsalted butter, softened
- 2 tbsp milk or cream
- 1 cup powdered sugar
- ½ tsp peppermint extract
- Crushed candy canes for topping
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, beat the butter and powdered sugar until light and creamy.
- Mix in peppermint extract.
- In another bowl, whisk together flour, cornstarch, and salt.
- Add dry ingredients to the butter mixture and blend until a soft dough forms.
- Roll dough into 1-inch balls and place on the baking sheet.
- Bake for 10–12 minutes, or until the bottoms are lightly golden. Cool completely.
- For the frosting, beat butter until smooth. Add powdered sugar, milk, and peppermint extract; mix until creamy.
- Frost each cooled cookie and top with crushed candy canes.
- Let frosting set before storing or serving.
Notes
- Ensure cookies are completely cooled before frosting to prevent melting.
- Store in an airtight container for up to a week; freeze for longer storage.
- Adjust peppermint flavor by adding a few drops more extract, to taste.
