Description

Peanut Butter Oatmeal Breakfast Cookies are soft, chewy, and packed with wholesome oats and creamy peanut butter to fuel your morning.


Ingredients

  • 1½ cups rolled oats
  • ½ cup natural peanut butter
  • ¼ cup honey or maple syrup
  • 1 large egg
  • 2 tbsp melted coconut oil or butter
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp salt

Optional add-ins: mini dark chocolate chips, raisins, or chopped nuts


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk peanut butter, honey, egg, melted oil, and vanilla until smooth.
  3. Stir in oats, baking powder, and salt until combined.
  4. Fold in optional add-ins if desired.
  5. Scoop dough onto the baking sheet and gently flatten each cookie.
  6. Bake for 10–12 minutes until set and lightly golden.
  7. Cool on the pan before serving.

Notes
