Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix together peanut butter, sugar, egg, and vanilla extract until well combined.
- Scoop tablespoon-sized portions of dough and roll into balls. Place on the prepared baking sheet.
- Press each ball gently with a fork in a crisscross pattern.
- Bake for 10–12 minutes or until edges are lightly golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

- Don’t overbake—cookies will firm up as they cool.
