Ingredients

  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together peanut butter, sugar, egg, and vanilla extract until well combined.
  3. Scoop tablespoon-sized portions of dough and roll into balls. Place on the prepared baking sheet.
  4. Press each ball gently with a fork in a crisscross pattern.
  5. Bake for 10–12 minutes or until edges are lightly golden.
  6. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
