Description

No-bake protein-packed energy bars made with peanut butter, chocolate, and a secret dose of cottage cheese for creaminess and nutrition.


Ingredients

Scale
  • 1 cup rolled oats
  • ½ cup cottage cheese
  • ¼ cup natural peanut butter
  • 2 Tbsp honey
  • 2 Tbsp cocoa powder
  • 2 Tbsp mini chocolate chips

Instructions

  1. Line an 8×4″ pan with parchment.
  2. Mix oats, cottage cheese, peanut butter, and honey in a bowl.
  3. Add cocoa powder and stir until evenly colored.
  4. Fold in chocolate chips.
  5. Press the mixture into the prepared pan firmly.
  6. Refrigerate for at least 2 hours until set.
  7. Lift out using parchment and cut into 8 bars.
  8. Store in an airtight container in the fridge for up to 5 days.

Notes

  • Try almond butter or sunflower seed butter as a peanut-free alternative.
  • Add-ins like chia seeds, dried fruit, or shredded coconut are great for variety.
