- 3 cups pancake mix (prepared according to package to make batter)
- 1 lb beef breakfast sausage, cooked and crumbled
- 1 cup milk
- 3 large eggs
- ½ cup maple syrup
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- Butter or oil for greasing
- Optional: extra maple syrup for serving
Instructions
- Preheat the oven to 350°F and lightly grease a 9×13 baking dish.
- Prepare pancake batter according to package directions and pour half into the baking dish.
- Sprinkle the cooked beef sausage evenly over the batter.
- In a bowl, whisk together the milk, eggs, maple syrup, vanilla, and cinnamon.
- Pour this mixture over the sausage layer.
- Top with the remaining pancake batter, spreading gently.
- Bake for 45–50 minutes until golden and set in the center.
- Allow to cool slightly before slicing. Serve with warm maple syrup if desired.
Notes
- Let the casserole rest for 10 minutes before slicing to set.
- Can be assembled the night before; refrigerate, then bake at 350°F for about 50–60 minutes.
- Substitute turkey sausage for a lighter option, or use maple-flavored sausage for extra sweetness.
