Description

Pancake Sausage Casserole – a cozy, quick, delicious breakfast bake where fluffy pancakes meet maple-kissed beef sausage.


Ingredients

  • 3 cups pancake mix (prepared according to package to make batter)
  • 1 lb beef breakfast sausage, cooked and crumbled
  • 1 cup milk
  • 3 large eggs
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • Butter or oil for greasing
  • Optional: extra maple syrup for serving

Instructions

  1. Preheat the oven to 350°F and lightly grease a 9×13 baking dish.
  2. Prepare pancake batter according to package directions and pour half into the baking dish.
  3. Sprinkle the cooked beef sausage evenly over the batter.
  4. In a bowl, whisk together the milk, eggs, maple syrup, vanilla, and cinnamon.
  5. Pour this mixture over the sausage layer.
  6. Top with the remaining pancake batter, spreading gently.
  7. Bake for 45–50 minutes until golden and set in the center.
  8. Allow to cool slightly before slicing. Serve with warm maple syrup if desired.
