Description

Pancake Poppers: Soft, fluffy, bite-sized pancakes baked in a mini muffin pan for quick, kid-friendly breakfasts.


Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter or oil
  • 1 tsp vanilla extract
  • Optional mix-ins: mini chocolate chips, blueberries, or chopped strawberries

Instructions

  1. Preheat oven to 375°F (190°C) and grease a mini muffin pan.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, egg, melted butter, and vanilla.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. Fold in any optional mix-ins.
  6. Spoon batter into mini muffin cups, filling about ¾ full.
  7. Bake for 12–15 minutes until puffed and lightly golden. Cool slightly before serving.

Notes

  • Do not overmix; a few lumps are fine for tender poppers.
  • Customize with your favorite mix-ins or add a pinch of cinnamon for extra flavor.
