Ingredients

  • 3/4 cup sugar
  • 2 large eggs
  • Zest of 1 orange
  • 1/2 cup milk
  • 1 3/4 cups all-purpose flour

Instructions

  1. Preheat oven to 350 F (175 C). Line or grease a 12-cup muffin tin.
  2. In a medium bowl whisk together oil, sugar, and eggs until smooth.
  3. Stir in orange zest and milk until combined.
  4. Whisk together flour and baking powder in a separate bowl.
  5. Fold the dry ingredients into the wet ingredients just until combined; do not overmix.
  6. Fold in chopped pecans, reserving a small handful to sprinkle on top.
  7. Portion batter into the muffin tin (about 3/4 full) and sprinkle reserved pecans on each top.
  8. Bake 18–22 minutes or until a toothpick inserted into the center comes out clean. Cool briefly in pan, then transfer to a wire rack.
