- 3/4 cup sugar
- 2 large eggs
- Zest of 1 orange
- 1/2 cup milk
- 1 3/4 cups all-purpose flour

Instructions
- Preheat oven to 350 F (175 C). Line or grease a 12-cup muffin tin.
- In a medium bowl whisk together oil, sugar, and eggs until smooth.
- Stir in orange zest and milk until combined.
- Whisk together flour and baking powder in a separate bowl.
- Fold the dry ingredients into the wet ingredients just until combined; do not overmix.
- Fold in chopped pecans, reserving a small handful to sprinkle on top.
- Portion batter into the muffin tin (about 3/4 full) and sprinkle reserved pecans on each top.
- Bake 18–22 minutes or until a toothpick inserted into the center comes out clean. Cool briefly in pan, then transfer to a wire rack.
