One Pot Marry Me Butter Beans – Creamy, cozy, and irresistibly comforting in a rich, herby tomato cream sauce cooked in one pot.
Ingredients

- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 small onion, finely diced
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp red pepper flakes
- 1 tbsp tomato paste
- 1 cup crushed tomatoes
- 1 cup full-fat coconut milk
- 2 cans 15 oz butter beans, drained and rinsed
- ½ tsp salt
- ½ tsp black pepper
- ¼ cup chopped fresh basil
- 2 tbsp nutritional yeast
- Optional: fresh spinach or kale
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3 to 4 minutes until softened.
- Stir in garlic, oregano, thyme, and red pepper flakes. Cook for 30 seconds until fragrant.
- Add tomato paste and cook for 1 minute, stirring to deepen the flavor.
- Pour in crushed tomatoes and coconut milk, stirring until smooth.
- Add butter beans, salt, and black pepper. Bring to a gentle simmer.
- Reduce heat and cook uncovered for 15 to 20 minutes until the sauce thickens and becomes creamy.
- Stir in nutritional yeast and fresh basil. Add spinach or kale if using and cook until wilted.
- Taste and adjust seasoning as needed. Serve warm with crusty gluten-free bread or over rice.
Notes
- Best served fresh, but leftovers can be refrigerated for up to 4 days.
- To thicken more quickly, simmer uncovered a few extra minutes or lightly mash a portion of the beans.
- For a lighter version, use light coconut milk or reduce olive oil to 1 tablespoon.
- Spinach or kale adds extra greens; add near the end and cook until wilted.
- Serve with gluten-free bread or over rice for a complete meal.
