One Pot Marry Me Butter Beans – Creamy, cozy, and irresistibly comforting in a rich, herby tomato cream sauce cooked in one pot.


Ingredients

  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp red pepper flakes
  • 1 tbsp tomato paste
  • 1 cup crushed tomatoes
  • 1 cup full-fat coconut milk
  • 2 cans 15 oz butter beans, drained and rinsed
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup chopped fresh basil
  • 2 tbsp nutritional yeast
  • Optional: fresh spinach or kale

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3 to 4 minutes until softened.
  2. Stir in garlic, oregano, thyme, and red pepper flakes. Cook for 30 seconds until fragrant.
  3. Add tomato paste and cook for 1 minute, stirring to deepen the flavor.
  4. Pour in crushed tomatoes and coconut milk, stirring until smooth.
  5. Add butter beans, salt, and black pepper. Bring to a gentle simmer.
  6. Reduce heat and cook uncovered for 15 to 20 minutes until the sauce thickens and becomes creamy.
  7. Stir in nutritional yeast and fresh basil. Add spinach or kale if using and cook until wilted.
  8. Taste and adjust seasoning as needed. Serve warm with crusty gluten-free bread or over rice.

Notes

  • Best served fresh, but leftovers can be refrigerated for up to 4 days.
  • To thicken more quickly, simmer uncovered a few extra minutes or lightly mash a portion of the beans.
  • For a lighter version, use light coconut milk or reduce olive oil to 1 tablespoon.
  • Spinach or kale adds extra greens; add near the end and cook until wilted.
  • Serve with gluten-free bread or over rice for a complete meal.
