- 4 bone-in, skin-on chicken thighs
- 1 cup cottage cheese
- ½ cup cherry tomatoes, halved
- ¼ cup sliced Kalamata olives
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Place chicken thighs in a baking dish or oven-safe skillet. Drizzle with olive oil and add garlic, oregano, salt, and pepper. Rub to coat evenly.
- Arrange cherry tomatoes and olives around the chicken in the pan.
- Spoon cottage cheese over and between the chicken thighs.
- Bake uncovered for 30–35 minutes, until the skin is crisp and golden and the juices run clear.
- Let rest for 5 minutes before serving.
- Garnish with fresh basil and serve directly from the pan.
