Description

This one-pan Mediterranean chicken dish features golden, crispy chicken thighs baked with cottage cheese, cherry tomatoes, Kalamata olives, and aromatic herbs. A simple yet rich meal full of bold flavor and healthy ingredients.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 cup cottage cheese
  • ½ cup cherry tomatoes, halved
  • ¼ cup sliced Kalamata olives
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place chicken thighs in a baking dish or oven-safe skillet. Drizzle with olive oil and add garlic, oregano, salt, and pepper. Rub to coat evenly.
  3. Arrange cherry tomatoes and olives around the chicken in the pan.
  4. Spoon cottage cheese over and between the chicken thighs.
  5. Bake uncovered for 30–35 minutes, until the skin is crisp and golden and the juices run clear.
  6. Let rest for 5 minutes before serving.
  7. Garnish with fresh basil and serve directly from the pan.
